Out of Evaporated Milk?

If out of evaporated milk, use 1 1/2 cups of whole milk simmered down to 2/3 cup for every 5 ounce can of evaporated milk needed. Note: Make sure to watch carefully while heating milk, whisking occasionally to eliminate scorching. Evaporation takes about 15 minutes when warmed on medium to low heat.

Out of Cake Flour?

If out of cake flour, use 1 cup all-purpose flour, minus 2 tablespoons of flour and replacing it with 2 tablespoons of cornstarch for every 1 cup cake flour needed. Sift together before adding before adding to other ingredients in recipe.

Out of self rising cornmeal?

If out of self rising cornmeal, use 1 cup cornmeal with 1/2 teaspoon salt, 1 1/2 teaspoon of cream of tartar and 3/4 teaspoon baking soda for every 1 cup of self rising cornmeal needed.
