Swiss Chard Scrambled Eggs
Here are the ingredients needed for one serving:
3 eggs
salt
1 tablespoon fresh green onions
1/4 cup fresh spinach
1/4 cup fresh Swiss chard
1 tablespoon olive oil
Crack three eggs and a dash of salt and scramble with a fork in a medium size bowl. Wash a handful of fresh spinach and Swiss chard by swishing in a sink full of water to remove any possible grit from garden. Run through salad spinner and set to the side. Over a medium to medium low heat, warm a tablespoon of olive oil in a medium size skillet. Next, with kitchen scissors, cut a freshly picked sprig of green onions and add directly into the skillet. Next, cut leafy greens into shreds and gently place into hot oiled skillet. Sauté the spinach, Swiss chard and green onions until soft and wilted. Then pour eggs into skillet and stir into sauteed greens. Continue cooking, scraping bottom and scrambling until the desired consistency of cooked egg is reached. Approximately 2 to 3 minutes. Remove eggs from skillet and onto plate. If desired, sprinkle a little cheese on the top of eggs and serve with toast.
