Tea Cakes in a Cookie Jar

I have memories from when I was a little girl, anticipating the moment when my great grandma Wright would allow me to climb up to get the cookie jar. It was usually kept on top of the kitchen hutch, and I would carefully climb up on the tall stool next to kitchen window air conditioner. When eye level with the jar, I’d take the top off the jar, making sure not to drop it on the floor, reach inside and pull out a large old-fashioned tea cake. They were delightful. I make my version now, but of course, great grandma Wright’s tea cakes were the best.

Here’s my recipe:

Old Fashioned Tea Cakes

1 cup salted butter at room temperature (if using unsalted add 1/2 teaspoon salt)
1 3/4 cups sugar
2 eggs
1/4 cup butter milk (if using whole milk add in 1 teaspoon apple cider vinegar when measuring)
1 teaspoon baking soda
1 teaspoon vanilla extracts (optional: almond or lemon extracts)
3 1/4 cups all-purpose flour (will need more for kneading and rolling out)

Cream together butter, sugar, eggs, vanilla, and buttermilk. Mix well, then add dry ingredients. Knead and roll dough on floured board. (Roll out to 1/2 to 3/4 inch thickness and cut with tea cup) Cut and place on greased cookie sheet. Bake at 350 degrees for about 8 minutes. Sprinkle with sugar while hot.

There you go! All you need now is a glass of iced tea.
