Breakfast Burritos

I love McDonald’s breakfast burritos, but I’m unsure of the ingredients, so I love to cook them from scratch for a savory mid-week breakfast or an easy going dinner. I usually make homemade tortillas the day before because it is a little time and labor intensive, but so worth it! 
 
My all time favorite flour tortilla recipe can be found on Rockin Robin’s Cooking Mexican Recipes’ website:
 
 
Place warmed tortillas in a tortilla warmer or in an oven proof glass dish with the tortillas wrapped in a warm damp cloth in a warm oven.
 
Next, in a skillet with a tablespoon of butter fry bacon (optional, add and sauté vegetables like onions, bell pepper, and mushrooms) until crisp. Remove the bacon and vegetables and set it to the side in a bowl. Crack eggs in a bowl; add a teaspoon of water and a dash of salt and pepper. Scramble with a fork and pour eggs into buttered skillet. Use a spatula and fold over eggs as the cook.
 
Now, assemble the breakfast wraps by laying a tortilla on a plate and spoon on eggs, a slice of bacon, spoon of vegetables and a heaping handful of grated cheddar or pepper jack cheese right into the center. Next roll up the tortilla and serve with salsa and sour cream. I usually serve orange slices on the side. YUM!
