Homemade Mac & Cheese

6 oz. dried elbow macaroni
2 tablespoons salted butter
½  cup shredded cheddar cheese
¼ cup milk
2 tablespoons flour
¼ teaspoon onion powder
¼ teaspoon of dry mustard
¼ teaspoon of nutmeg
¼  teaspoon of  salt
¼ teaspoon of white pepper
2 slices of american cheese

Boil pasta according to package directions.

In a saucepan over low heat begin melting the butter. Then in a small bowl mix together the following dry ingredients: flour, onion powder, dry mustard, nutmeg, salt and white pepper. Add the dry ingredients into the saucepan and whisk into the melted butter until a light colored rue is achieved. Next slowly pour the milk and whisk it to form a smooth white sauce. (Increase or decrease milk based on how thick you want the sauce).  Add cheese and continue stirring until cheese is melted and there are no lumps. Add more salt and pepper if needed.

Drain cooked pasta and pour into an ovenproof casserole dish. Next, pour the melted cheese sauce over the cooked pasta. And top with a few slices of American Cheese.

Put in a 300 degree oven for 10 minutes or microwave on high for 3 minutes to melt the american cheese.
