Peanut Butter Cookie Recipe-Emily’s Favorite!

My favorite peanut butter cookie recipe is from the cookbook Where’s Mom Now That I Need Her  (44th printing, April 1999, page 196) . I was given this book as a present over 12 years ago. It’s an excellent cookbook for basic everyday cooking.

This is my own personalized version of the recipe:

 Peanut Butter Cookies

1 ¼ cup Flour

¼ teaspoon salt

¼ teaspoon baking soda

½ cups butter

½ cup crunchy peanut butter

1 cup sugar

1 teaspoon molasses

1 egg

Pre-heat the oven to 375 degrees and grease a 13 X 9 cookie sheet. Place softened butter and peanut butter into a standing mixer with a flat beater attachment. Mix the two butters together on low.  Next, add the sugar, molasses, and egg and continue mixing on low. In a small bowl mix flour, salt, and baking soda, then add the dry ingredients to the wet mixture and mix on low to blend together.

With a #16 disher (ie. 1/4 cup ice cream scooper), dip out cookie dough and place on greased cookie sheet. Use a wet fork and press down the tops of cookies making a hatch pattern, then sprinkle with sugar.  This  recipe makes 8 large cookies. Serve with a cold glass of milk or a hot cup of coffee.
