Peggy’s Sweet Potato Casserole
My late mother-in-law, Peggy Tew made this casserole for Thanksgiving dinner each year. It’s a tradition we still carry on today. It is rich enough to eat for dessert too…yum! Enjoy.
Sweet Potato Casserole
3 cups mashed sweet potatoes
¾ cup sugar
⅓ cup milk
½ cup margarine
1 teaspoon vanilla
1 teaspoon butter
Topping:
½ cup margarine
⅓ cup all purpose flour
1 cup brown sugar
½ cup chopped nuts
Boil and mash potatoes. Add other ingredients and whip with mixer. Put in casserole and top with topping. Bake at 350 degrees for 30 minutes.
